Gluten-Free Roti {Indian Flatbread}

For folks who suspect they might have a gluten intolerance/sensitivity or Celiac — an autoimmune condition where people who have it cannot eat foods that contain gluten as it can trigger an immune reaction in the lining of the small intestine, whose main job is to help with nutrient absorption. Weight loss, upset stomach, nausea, skin issues and headaches are some of the symptoms that can manifest.

However, a sensitivity to wheat-containing products may be coming from a batch of proteins not related to gluten called Amylase Trypsin Inhibitors (ATI) which contribute to an  inflammatory reaction. Our modern day wheat has a high amount of ATI when compared to the ancient versions. Cross contamination is also a factor to consider when buying wheat these days. A brand that I highly recommend is called, Metta Gluten Free Flour. I like that this product is free of corn, soy, nuts, and dairy. 

It was great to see how the roti (Indian flatbread) turned out. Hearty, great soft texture and just a little chewy. For my very basic first try, I used two cups of the Metta Atta with a few teaspoons of warm water, a pinch of salt and a teaspoon of oil. Kneaded it all together, rolled the rotis out into round shapes and cooked it on the pan on medium-high heat. They were ready in a few minutes. Can he enjoyed with a side of yogurt or with a curry.
