Colorful Salmon Coconut Wrap

salmon_wrap

Sometimes you just need a simple, no-hassle, easy to prepare option for dinner and it's always helpful to have the accompanying ingredients on hand to bring it all together.

In my version, I have used locally and sustainably grown greens from Freita's Farm, an organic mango recently purchased from the local supermarket for an antioxidant zing, and a fillet of sustainably farmed fish from Jordan Bros. Their salmon contain low amounts of harmful chemicals, are high in protein, vitamins and minerals. For the seasoning I have used a flavourful tandoori spice mix from a local woman-owned business called Urban Spice World. Baked the marinated salmon in the oven for 25 minutes and once done - put it all together in a gluten free, coconut wrap from Thrive Market.

Hope you enjoy your gut-healthy, gluten-free version of this wrap with the ingredients available to you. The key is to have fun and be creative. Hope this dish tickles your chi and brings you a lot of comfort and joy in mind, body and spirit.
